Smoothies are favorite meal on the go because it is an easy way to get your vitamins and nutrients all in one cup. I’ve been seeing some beautiful images of smoothie bowls and I thought it seemed like a great way to enjoy a smoothie when you’ve got a little extra time to sit down and enjoy it as a meal.
I use a Vitamix for blending which makes all the difference in the world! It truly pulverizes the raw beet and spinach into a wonderful smooth texture. If you have a simpler blender just chop the beet into small pieces and it should work just fine. This is one of those recipes that you can make your own and get as creative as you like, so get creative and enjoy!
½ cup Greek yogurt
½ cup coconut water
½ cup pomegranate juice
2 cups packed spinach
1 cup frozen red cherries
1/2 cup frozen blueberries
1 red beet, peeled and chop (about 1 cup)
1 tbsp flax seed meal
Add all smoothie ingredients to a blender and blend until creamy and smooth. Taste and adjust flavor or add more liquid to thin if needed. Pour smoothie into two bowls and sprinkle on your desired toppings.
