Cauliflower Chilaquiles Verde

Chilaquiles is a traditional Mexican dish originally created to use leftover tortillas or stale chips. Recipes for chilaquiles typically consist of tortilla chips or strips cooked in a salsa with meats, vegetables or even eggs. If you have a tasty salsa verde recipe feel free to make your own, I used La Victoria pre-made salsa. For this recipe I used cauliflower and black beans; a great vegetarian-friendly that can be served as an appetizer or the main meal. You can easily tailor this recipe for breakfast by adding eggs, poached or fried, right before serving.  It is unbelievably easy to make and a total crowd pleaser!

Cauliflower Chilaquiles Verde
Makes 4 servings.Cauliflower Chilaquies

Ingredients
Cauliflower
1 head of cauliflower
1 tsp chili powder
1 tsp paprika
1 tsp ground cumin
1/2 tsp salt
1/2 tsp black pepper

Beans

1 can black beans
1/4 cup diced red onion
2 garlic cloves
Juice of 1 lime

Chilaqules
1 tbs corn oil
1 1/2 cups salsa verde
20 round tortilla chips

Garnish

Diced red onion
Queso fresco, crumbled
Shaved jalapeños
Crema Mexicana
Cilantro

Preheat your oven to 400 degrees. In a small bowl mix together chili powder, paprika, cumin, salt and pepper. Wash the cauliflower, cut into florets then place on a lightly oiled baking sheet. Sprinkle the cauliflower with olive oil and chili powder seasoning blend, toss to coat. Place in oven and roast for 30 minutes.

Heat one tablespoon of olive oil in a small sauce pot. Sauté the diced red onion and garlic for three minutes. Add the beans and lime juice, cover and cook on low until ready to use.

Heat one tablespoon of corn oil in a large sauté pan over medium heat. Pour the salsa into the pan and cook for five minutes. Next add the tortilla chips to the salsa turning the chips gently until they are well coated. Let the chips cook a little while longer, careful not to let them get too soggy.

Divide the chip mixture between two to four plates. Then top with black beans, cauliflower florets, chopped onion, queso fresco, and shaved jalapeños, then drizzle with the Crema Mexicana and garnish with cilantro.
