A friend of mine gifted me a bag of black lentils and I was looking forward to making something delicious with them. The first thing that popped into my head was something with coconut milk. This tasty recipe is super easy and very good for you. Black lentils, or black gram, contains very high levels of protein and essential amino acids. I hope you enjoy this tasty vegan dish.
- 2 tbs coconut oil
- 1/2 onion, diced
- 2 garlic cloves, diced
- 1/2 tbs ginger, grated
- 1/2 tsp tumeric
- 1/2 tsp corriander
- 1/4 tsp cumin
- pinch salt & pepper
- 1 sweet potato, peeled and diced
- 3/4 cup of lentils
- 1 can coconut milk
- 1 tbs cilantro, chopped divided in two portions
In a large pot or dutch oven, heat the coconut oil. Add in the onion, garlic, ginger and seasonings. Cook for 2-3 minutes or until onions are translucent. Next add in the sweet potato and lentils. Cook for 2-3 more minutes, stirring frequently. Finally add in the coconut milk and half the cilantro. Cover and cook on low/medium heat for 20-30 minutes. Test the lentils to make sure they are fully cooked. Garnish with remaining cilantro and serve warm.
